CHERRY AND GIN GLAZED HAM

It’s my cherry and gin glazed ham!

INGREDIENTS

  • 5kg ham on the bone

  • 40 cloves

  • Glaze

  • 50ml Tanqueray London dry gin

  • 150g cherry jam

  • 100g brown sugar

  • 50ml honey

  • 100ml orange juice

  • 2 tbsp seeded mustard

  • 2 tbsp Dijon mustard

  • 1 tsp allspice

  • 1 tsp cinnamon powder

METHOD

Use a small knife to skin and score the fat of the ham, press cloves into a pattern of your choosing. Wrap the end of the bone with foil so it doesn’t burn

In a small pot on medium heat bring all ingredients of the glaze to a boil.

Preheat oven to 160C

Place ham on a wire rack over a roasting tray and brush with glaze ( I add 1 cup of water to tray so the dripping don’t burn)

Place in the oven and brush with glaze every 15-20 minutes for 75-90mins!
