CAULIFLOWER BITES

INGREDIENTS

  • 1 cauliflower cut into florets

  • 1 cup of flour

  • 11/2 cups of panko crumbs

  • 4 tbsp of garam masala

  • 2 tbsp of cumin ground

  • 2 tbsp of coriander ground

  • 4 tsp turmeric

  • Salt

  • 2 eggs

RAITA DIPPING SAUCE

  • 200g greek yoghurt

  • 1 garlic clove minced

  • 1 small piece of ginger finely grated

  • 1/4 cup of coriander leaves chopped

  • 2 tbsp of mint leaves chopped

  • Juice of half a lime

  • 1/2 tsp garam masala

  • 1/2 a Lebanese cucumber seeded and grated

  • Legit just mix everything.

METHOD

Ok set the cauli a side, in 3 bowls you’ll need to make your coating so in 1 bowl add flour, in another bowl add the panko crumbs, now split the spices between the two bowls and pop in a good pinch of salt in each too. In the final bowl eggs beaten.

Get a deep fryer to 170C

You need to pop the cauliflower in batches into the flower mixture, then the egg, then the panko then the fryer. Cook for 4-7 minutes until golden brown and remove onto a paper towel and sprinkle with salt like you were on a cooking show and this is the “ I know what I’m doing moment”

Garnish with coriander and lime!

NOTES

Tbh this probs work with chicken thigh too if you wanted to chop it up and coat it.
