Çilbir

So fun story, the first time I had these eggs I was hungover AF. I had woken up after a deep and meaningful over night relationship, at a random house in Fitzroy.

I walked into the Kitchen and a really sweet girl was sitting eating breakfast (if this was you and you remember me let me know)

I asked her what she was eating cause it smelt amazing and she generously offered me some. Well this dish called Çilbir is a super famous Turkish poached eggs dish. F**k me dead this is good. Do yourself a favour follow the recipe below, make it and share it with the random guy your housemate brings home this weekend.

INGREDIENTS (BASE)

  • Yoghurt

  • 1/2 cup of Greek yoghurt

  • 1 small clove of garlic grated

  • 1.5 tbsp of chopped dill (fresh)

  • Pinch of powdered cumin

  • Salt to taste

Legit mix everything in a bowl and pop it into your fave breakfast serving plate.

INGREDIENTS | Aleppo butter

  • 2 tbsp butter

  • 2 tsp of Aleppo pepper (sometimes I cheat and use the chilies flakes you get from Coles)

  • 1/4 tsp or cumin

  • 1 tsp smoked paprika

  • Salt to taste (be generous)

METHOD

Butter goes into a pan on medium, once melted throw everything else in and as it begins to bubble away give it a mix and turn off the heat so everything can infused. Let it cool and serve with 2 poached eggs ( just google how to poach and egg it’s super simp)

Dill to garnish.

Toast on the side to mop it all up.

Mate. Ooftt. Stop.
