Chilli Garlic Prawns
These prawns remind me of home, these chilli garlic prawns are great the way they are but when I was younger I think it started when I was 12, I would use scissors cut them into 1 cm pieces and mix it into my rice with soy sauce, for some reason I always get hiccups when I ate it (strange). I make this when I miss my family. So here's to dishes that deliciously remind you of the people you legit find the most annoying In your life but can't live without.
INGREDIENTS
1 tbsp of my chilli oil
500 g of soft shell prawns (heads and legs trimmed back)
(if you can't find soft shell prawns you can peel the prawns but leave the heads and tails).
3-10 cloves of garlic finely chopped (I dunno I add garlic according to how much I want to scare off vampires that day)
2 chilis rough chopped
a pinch of salt
chives for garnish
rice to serve
METHOD
Chilli oil in a large pan on medium, once sizzling add prawns and garlic for like a minute or 2, stir and use a wooden spoon or something to squash the heads of the prawns to get the flavour out.
Add chilis, salt and cook for a further 3 minutes stirring once prawns have changed colour, I usually cover them with a lid and turn off the heat for like 2-4 minutes.
Serve over rice ( I eat the shells you dont have to) I dunno people are weird.
